My husband has been complaining that I don't cook much anymore so he inspired me to try some new recipes. I have never dined at Victoria & Albert's at the Grand Floridian in WDW. My friend recently dined there & said it was exquisite. I'll have to ask her if she ate this soup. I forgot to ask. :)
This is very simple to make. The only thing I had to google was how to peel & chop ginger since I never worked with it before. All you have to do is break off a piece of ginger , peel it w/ vegetable peeler & slice thin. You will just puree everything anyways. :) I didn't realize how long this took to make until I was cooking it. Well worth the wait! I recommend getting a dicer & emulsion blender if you cook a lot. I got both of those things for Christmas & they saved me a lot of time! I stirred it every 20 minutes or so to mix it up.
I cut the recipe in half & it makes 3 very large bowls. It was worth the wait! It was nice to have something different & I served w/ pumpernickel bread & butter. Remember to take out the bay leaf & strain before serving!

Do you think it would taste ok if I omit the heavy cream? This sounds amazing, but I don't like creamy soups. Thanks!
