Cinderella's Royal Table Blueberry Cheese Buckle Recipe....

You can find the Blueberry Cheese Buckle at Cinderella's Royal Table in the Magic Kingdom. The picture above is the buckle served with lemon ice cream. 

I had a TON of blueberries I had to use quickly so I randomly found this recipe online. This recipe was super easy to make. It is 3 different steps that you put together at the last second. I have also made the chocolate buckle & that one is out of this world! Here is the chocolate buckle recipe if you are interested: 


I made nine LARGE muffins. These were so good I had people at work fighting over them & several people asking me for the recipe! 

RECIPE:


YIELD: 1 Dozen ( I made 9 large Muffins) 
INGREDIENTS
Muffins
3/4 stick (6 Tbl) Unsalted Butter
3/4 cup Granulated sugar
1 ea. + 1 yolk Eggs
1/3 cup Milk, whole
1 1/2 cup All purpose Flour
1 1/2 tsp. Baking Powder
3/4 tsp Vanilla
3/4 tsp Salt
2 cups Fresh Blueberries
1 1/2 cups Cream Cheese, whipped
Topping
3 Tbl. Unsalted Butter
1/2 cup Flour
3 1/2 Tbl. Sugar
1/4 tsp Cinnamon

METHOD:

Batter - Melt butter. Whisk in milk, eggs and vanilla. Mix all dry ingredients together, then add milk mixture and stir until combined. Don't over mix. Gently fold in blueberries. Divide batter among muffin pans. Insert I tsp of cream cheese into the center of the batter.
Topping -- Rub together all ingredients until crumbly. Sprinkle over batter.
Bake in a preheated 375 degree oven for 18 - 20 minutes, or until a toothpick comes out clean. Cool in pans for 15 - 20 minutes then carefully remove from cups. Serve warm with lemon ice cream.

Disney Wedding...



We went to a Disney themed wedding over the weekend! Their wedding rehearsal was so cute. I really wish I took pics! It was on his parent's property on the river. They have a long drive with those LED Mickey & Minnie solar lights all up the drive. They had a lot of Mickey & Minnie gnomes as well. It was a really nice party.

I will tell you that the bride interned at Disney & the groom was an engineer at Disney. He was oblivious to the fact that she liked him. Finally one night a bunch of their friends hung out at the park one night & he "got it." He moved away to another job to PA & after only a month of dating & then she moved up with him. After a year they got engaged. He proposed in front of the famous castle in Germany. :) They have since moved back down to FL working for Disney & Universal. They are both engineers.They are truly one of the sweetest couples I've ever met. She glows when she talks about him or when she would post on FB updates about how excited she was to marry him.

At their wedding ceremony the prequel music that was played on the piano was "Beauty & the Beast" "Colors of the Wind" " Can You Feel the Love Tonight" She was an absolutely beautiful bride. They both did Weight Watchers & both lost a lot of weight & both look wonderful!

Their centerpieces were Cinderella carriages & castles with sunflowers.





Their wedding was at Marriott Ranch in Front Royal,VA We had a great time at their wedding & hope they enjoy their AMAZING honeymoon at DisneyLand Paris. They are staying at the DL hotel for their Honeymoon. I cannot wait to see all of her pictures!

My husband has been friends with him since high school. We met him & her at Hershey Park last year. Soon after meeting her we realized we both did the Disney college program. Not only that but we both worked in the same exact area & knew some of the same people. My husband told him that day that she was a keeper & he better hold on to her. :) We are glad that he did & we wish them a long, happy& healthy marriage together.....

Blue Sky Idea - A little something for the Haunted Mansion's outside graveyard

The imagineer-in-Waiting was reading about the Haunted Mansion's outside graveyard and thought of a little addition.  I was just thinking that it could have a cenotaph.  Wikipedia has the following definition: "A cenotaph is an 'empty tomb' or a monument erected in honor of a person or group of people whose remains are elsewhere..."  Yes, I'm aware that one of the gravestones is already marked "MT Tomb," but this will be different.
