Fairfax Fare Dinner Review at Disney's Hollywood Studios...

One of my good Disney College Program friends worked at Fairfax Fare & the retired Rosie's at Disney Hollywood Studios back in 2000 or then MGM. Whenever I walk by I always think of my friend Jimmy. We still chat now & then but he lives on the West Coast now. Miss you Jimmy!!!! I will post a picture of him working in his FABULOUS costume. ;)



My hubby was OBSESSED to try the famous turkey leg. When we were at Magic Kingdom that line was always forever long. Before Fantasmic we had a quick dinner. He LOVED his choice & it will be his new staple treat I'm sure. I chose to eat the half of chicken & beans combo. I hated the beans. They were NOT sweet BBQ beans like I thought. I ended up giving them to my hubby. The chicken was just okay. It was juicy & the spices were good I was just disappointed. I should've went for the mac & cheese hot dog looking back. What was I thinking?!

Red Velvet Cake & Cream Cheese Icing Recipe...


I know this isn't a Disney recipe but wanted to share an actual good recipe for red velvet. I was not impressed w/ the red velvet cupcake at DHS. It was so dry I threw it away! I have made this cupcake recipe into a cake two times with no issues. People always come back begging for more with this cake!

Like I said I use this recipe in a standard cake pan. I bake at 350 degrees for 30-35ish minutes but am constantly checking on the cake.

Ingredients:


  • 2 1/2 cups cake flour (not self- rising), sifted
  • 2 tablespoons unsweetened Dutch-process cocoa powder
  • 1 teaspoon salt
  • 1 1/2 cups sugar
  • 1 1/2 cups vegetable oil
  • 2 large eggs, room temperature
  • 1/2 teaspoon red gel-paste food color
  • 1 teaspoon pure vanilla extract
  • 1 cup buttermilk
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons distilled white vinegar


  1. STEP 1

    Preheat oven to 350 degrees. Whisk together cake flour, cocoa, and salt.
  2. STEP 2

    With an electric mixer on medium-high speed, whisk together sugar and oil until combined. Add eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Mix in food color and vanilla.
  3. STEP 3

    Reduce speed to low. Add flour mixture in three batches, alternating with two additions of buttermilk, and whisking well after each. Stir together the baking soda and vinegar in a small bowl (it will foam); add mixture to the batter, and mix on medium speed 10 seconds.
  4. STEP 4

    Divide batter evenly . Transfer tins to wire racks to cool completely before removing. Cake can be stored overnight at room temperature, or frozen up to 2 months, in airtight containers.
  5. STEP 5

    To finish, use a small offset spatula to spread cupcakes with frosting.

    Cream Cheese Frosting:
    One 8 oz softened cream cheese
    One stick softened butter
    One cup sifted powdered sugar 
    One teaspoon vanilla 

    Blend all very smooth & creamy. This recipe is just enough for the cake! It is pretty good icing. This is a known staple in my recipe box. Please feel free to ask any questions!

My husband gave me the idea for this post. If you aren't on Disboards.com all the time you might not know all the lingo for Disney terms as well as Cast Members terms. I'm sure I will miss a lot of Disney abbreviations because there are THOUSANDS! I will try my best to list the most popular ones. Downtown Disney old school....


This picture might date myself ;) 




I was going through some of my old pictures the other day & came across these. I used to LOVE browsing in the Virgin records store! I could spend hours there. Being a poor College programmer I spent a good chunk of time there & the disney discount helped! I got quite a few books & CD's there back in the day. I was sad to see it go.

My roommate worked in Downtown Disney so occasionally I would meet her at MCD's for her break. I had no idea there was a cast member entrance to that McD's until she showed me. Plus the cast members got a discount on top of being cheap & a totally separate counter/eat in area. It was pretty darn cool!

Does anyone else miss Pleasure Island?! We used to go almost every week on cast member night. Thursday nights CM's got in for free! It was always so much fun. I remember the ice luge, jello shot syringes, beach club & 8 trax!!! I also enjoyed NYE every night & the Comedy Warehouse!

What were your favorite parts of DTD that is no longer?

My favorite Disney Character!


We all have a favorite character. Mine is Fantasia Mickey. I don't know what it is about that particular Mickey but I love him. The first time I saw him in DHS was in 2011. When I realized it was Fantasia Mickey my friend & I started jumping up & down like little school girls!

Disney Postcards & What do you Collect???



Does anyone remember the free postcards that the Disney resorts used to give out for free? I found these in a box with some of my old Disney stuff. I used to go hotel hopping & collect free things in 1999-2000 when I lived there. Does anyone know if Disney still gives away free postcards at the resorts?




Right before I left my Disney College Program in 1999 I bought a bunch of these postcards at the Art of Disney that used to be on Main Street in MK but has since been replaced by something else. I got the Villains postcard at MGM back in the day. I really need to frame these & display. Do you collect postcards from WDW? If not what do you collect?
