Magic Kingdom's Pumpkin Spice Waffle Sundae from Mickey's Not So Scary Halloween Party Disney Recipe




I missed out on having this on my last Disney Magic Kingdom trip so thought I should try it at home to share with you all! 

This was super quick & easy to make that even the kids can help with this. I have the original Mickey Mouse Waffle Maker & can get about 8-10 waffles from this Disney recipe. 

**It is important to note that these will need to cook a little bit longer than normal waffles. 

Ingredients
  • 1 1/2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon freshly grated nutmeg
  • 1 teaspoon ground ginger
  • pinch of salt
  • 1/2 teaspoon black pepper
  • 2 eggs
  • 1/4 firmly packed brown sugar
  • 8 oz roasted pumpkin flesh, fresh or canned
  • 1 2/3 cups milk
  • 4 tablespoons unsalted butter, melted and cooled
  • freshly grated zest of 1 orange
  • whipped cream
  • vanilla ice cream
  • festive sprinkles

Instructions
  1. Sift the flour, baking powder, baking soda, cinnamon,nutmeg, ginger, salt and pepper into a large bowl.


2.Put the eggs, sugar, pumpkin, milk, butter and zest into a second bowl and beat well.


3. Gently fold in the flour mixture.



4.Depending on the size of the waffle iron, spoon about 1/4-1/2 cup of the batter into the preheated compartments. Cook until crisp, 4-5 minutes.


I cooked my waffles for 4 minutes each. Anything under that was not cooked all the way through for my waffle iron.



4.Top waffles with a generous scoop of vanilla ice cream.


5.Swirl on some whipped cream and sprinkle on some festive sprinkles.

Epcot Beef Bourguignon Disney Recipe

 Epcot Beef Bourguignon Disney Recipe 


This was my first time ever making Beef Bourguignon (beef stew) before so I was hoping that this Disney recipe would come out good. This recipe is VERY easy even for beginner cooks out there so please do not feel intimidated to try making this. You do NOT need to use bougie expensive wine for this either. I used the ALDI Shiraz for $3 to make this recipe & it came out amazing! I love the rich flavors that all work well together while still being simple. 

I didn't add as many mushrooms as this recipe called for as I am not a huge fan of them so please feel free to add them. I used about 1 cup of button mushrooms & the recipe still came out great. ( I could not find the mushrooms at my grocery store that this recipe called for)

I have never tried this at Epcot's Food & Wine Festival before but after tasting this recipe I recommend it! 

Ingredients

    3 tablespoons olive oil  
   2 pounds beef tips - cut into cubes  

  1 1/2 cups onion, diced  
  1 cup fresh crimini mushrooms  
  1 cup button mushrooms  
  2 tablespoons flour  
  3 tablespoons tomato paste  
  1 1/2 cup red wine  
  1 tablespoon Kosher salt  
  1 teaspoon black pepper, freshly ground  
   2 bay leaves  
  1 cup beef broth 
  4 tablespoons butter
You can serve this with pasta, rice, or mashed potatoes. 

I chose to make white rice with ours. 




Heat olive oil in a an and cook beef for about 10 minutes. *Please note different kinds of beef give off more grease than others when making this. Add onions, mushrooms, flour, tomato paste and mix.  Cook 5 minutes to bring to temperature just under boiling/simmering.  Add wine to  pan by scraping browned bits off the bottom of the pan.  Add salt and pepper, bay leaves, and beef broth. Bring to simmer again.

Lower heat to low  to a simmer.  Cover and simmer on low for 45 minutes, stirring every 10 minutes or so. 




After 45 minutes to an hour see if the beef is tender by piercing meat with a fork. Remove from heat and stir in butter until totally melted.  Serve immediately over rice, pasta, mashed potatoes.  Remove bay leaves before serving.


My husband LOVED this so much! He ate the leftovers the next day & he said it was just as good as eating fresh. He just reheated it in a cast iron pan on the stovetop & made fresh rice.
