Disney Holiday Decorations...


Sorry I've been MIA everyone! This week has been crazy with baking,shopping,&wrapping!

Most of my home holiday decorations are Disney. My hubby complains but I don't see him buying any?!

Carrot Cake Cookie Recipe...

I came across a recipe online claiming it was really close to the recipe. After tasting it I don't think it is exact but it is still pretty darn good to get in your carrot cookie fix if you cannot make it to the world! The recipe made about 25 sandwich cookies. I made these for our work xmas party on Monday so hopefully all will enjoy! The recipe does make too much icing though. They are very moist & delicious! I did not add nuts to mine. I took mine out of oven at 10 minutes. I used a cookie scoop to make sure they were the same size & flattened with a fork. Please feel free to ask any questions about the recipe! I used the same brand box cake & used pineapple & coconut as recipe suggested. You cannot really taste them anyways. This was SUPER easy to make just in case some of you new bakers are intimidated by this recipe. Just follow the directions & you will be fine. :)

Carrot Cake Cookies

Always remember to check your cookies at the earliest baking time specified and continue baking if necessary, checking every minute or so until your cake mix cookies are done. And only put cookie dough on cool cookie sheets, never warm, to prevent your cookies from melting and spreading too much.

These cookies should bake in about 10 to 12 minutes if you are not using additional wet ingredients such as carrots and pineapple. They will need a couple more minutes baking time if you do.

***Be sure to keep reading as I have included  recipe for Cream Cheese Frosting (you can use store bought if in a hurry, but homemade is simple and WORTH it!)

Carrot Cake Mix Cookies Recipe
1 (18.25-ounce) package of carrot cake mix (I like Duncan Hines Decadent Brand)
1/3 cup vegetable oil
2 large eggs
1 cup raisins or sweetened dried cranberries
Any of the following optional ingredients you choose: (The Decadent Mix includes Shredded Carrot)
1 teaspoon pumpkin pie spice
1 cup chopped nuts
1 cup grated peeled carrot
1/2 cup crushed pineapple, well drained
1/2 cup shredded coconut flakes
Preheat oven to 350F degrees. Line cookie sheets with parchment paper for best results. (Alternatively lightly spray cookie sheets with nonstick cooking spray.)
In a large bowl beat half the dry cake mix, oil, eggs, and pumpkin pie spice (if using) with an electric mixer on medium speed until well-blended and smooth, 1 to 2 minutes.
Stir in the, remaining cake mix and any optional additions you are using with a wooden spoon, just until combined.
Drop the dough by teaspoonfuls 2 inches apart onto prepared cookie sheets.
Flatten the cookie dough balls slightly with the back of a fork or the bottom of a glass.
Bake for 10 to 14 minutes, or just until the edges are set but the centers are still soft.
Remove from the oven and cool the cookies on the cookie sheet for 1 to 2 minutes and then transfer the cookies to a wire rack to cool completely.
Makes about 4 dozen Carrot Cake Mix Cookies (Adapted from Epicurious)

Sandwich 2 cookies together with a glob of Cream Cheese Frosting in the Middle

 Cream Cheese Frosting

2   8oz. Packages Cream Cheese Softened
1/2 cup Butter Softened
2 cups Confectioner's Sugar Sifted ( I didn't sift mine)
1 Tsp Vanilla Extract
2Tbsp Milk ( I used 1T)
In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Add Milk if necessary to soften. Store in the refrigerator after use.

I saw this is one of the gift shops in Epcot. I think this is the most $$$$ thing at WDW no? For a hefty price tag of $37,500.00 you can have this Swarvoski crystal castle! What things have you seen at WDW that were crazy prices???

What ears or hats do you like at WDW?

You know you do it! You take pictures with all the ears you can at the parks! My hubby enjoyed this on our trip. What are your favorite ears? I prefer the headband ones due to my curly hair :)

Happy Bday Walt! One Man's Dream Exhibit Review...

There are not many people who have lived to have the same legacy as Walt. The only other person I could say that would've been at the same level is maybe Steve Jobs but I'm sure there are a few others. I actually had a dream recently where I got to meet & shake hands with him. He would be the one person I would've LOVED to meet. What do you think WDW would've become if he didn't die so young? It is such a shame he smoked. :( If you haven't seen the 2 hour ABC Special on his life I highly recommend it. I hope to visit the Walt Disney museum in San Francisco one day. It looks amazing!  - Museum Link

My first time to "One Man's Dream" was in November of 2011 but I didn't get to have much time there. This past trip in October 2012 I spent over an hour & half in the exhibit. It was so cool to see some Disney historical artifacts. I know some folks think it is a waste of time but for the true Walt Disney fan this is a must do!

You must watch the video presentation  at the end of the exhibit! It is narrated by Walt himself. Who better to tell the story of Walt than himself? The end of the video made me tear up. It is so sad to lose such a brilliant man so young. We'll always wonder what the Disney company would've been if he lived longer...

My Birthday Bfast Disneyfied! ...

After our WDW Trip I decided for my birthday I wanted to make Chef Mickey's waffles & Breakfast Potatoes
My husband was super sweet & made everything for me as I waited patiently. I read online that WDW uses a special Malt waffle mix but we didn't see a huge difference? I preferred the waffles with powdered sugar as my hubby liked it in syrup. This recipe made 6 waffles. We had them two days in a row :)  

Mickey Waffles Recipe Ingredients

The Chef Mickey's breakfast Potato recipe was too large so we just made it half the size. :) I got pre- shredded hash browns from grocery store so it would be easier for him to make. They were VERY good & my hubby was over the moon for them. ha-ha We will definitely make this breakfast again in the future. It was special to do for my birthday :)

Chef Mickey's Bfast Potatoes
4 cups shredded Idaho Potatoes ( shred with a food processor or box grater)
1 cup sour cream
1 cup heavy cream
2 cups shedded Cheddar Chesse
2 teaspoons salt
4 strips of crispy bacon
1 teaspoon freshly ground black pepper
1. Place shredded potatoes in mixing bowl.
2. Add sour cream, heavy cream, 1 cup of shredded cheddar cheese, and the salt and pepper. Mix gently until evenly mixed.
3. Place in greased casserole pan or baking dish and bake at 350degrees for 35 minutes.
4. Top with remaining 1 cup of shredded cheddar cheese and return to oven for an additional 10 minutes or until cheese is melted and starting to brown.
5. Crumble bacon up and sprinkle over the dish and serve.
