Disney Carrot Cake Recipe...



I found this cookbook on Amazon.com for $15 recently! I promised to bake something for a guy at work & he wanted carrot cake so this was a great opportunity to try a new recipe. This recipe is extremely easy & quick to complete. I followed the recipe/directions exact. I should have checked on the cakes before the time was up. These came out a tad dry in my opinion. The guys at work LOVED this. I just iced them into two 9" cakes separately instead of stacking them into one double layer cake. I did that so it was easier to transport for myself. Next time I make it I will cook less & make into double layer. The recipe calls for buttercream icing  but I used a Disney Cinnamon cream cheese frosting recipe that I already had to give it a little something extra. The guys came back for 3rd & 4th's of this cake so I'm assuming they really liked it. :) Just be careful when making this in 9 inch pans & watch them. I was doing too many things at once & lost track of the time. :) I will definitely make this again!

Quick Tip: I highly recommend a food processor with shred attachment & nut chopper for this recipe! I also used baby carrots for this recipe so it was easier to put in processor.

Best mixer attachment ever!!!!








Here is the recipe for the frosting: 

1 c unsalted Butter (softened)
1.5 c cream cheese softened (1.5 blocks)
1 t Vanilla 
2 c Powdered Sugar
1/2 t ground cinnamon 

Blend butter & cream cheese together until smooth. Then slowly add rest of ingredients until mixed well & smooth! 




Mix oil & sugar well









Batter after everything is added

Gluten Free & Other Dietary Information for DisneyWorld!

I recently emailed WDW to get the most updated information for eating on a special diet while at WDW. It amazes me how wonderful they are in accommodating their guests! I was told to go a little early to your ADR's so you can talk to chef about your needs. Some gluten free dishes might take longer.

Thank you for inquiring about how Walt Disney Parks and Resorts handles special dietary requests.

Walt Disney Parks and Resorts Food & Beverage team is committed to offering a wide range of options to accommodate Guests with food allergies or intolerances. When booking your dining reservations, please be sure to advise the Cast Member of your special dietary restrictions. If you book online, please make sure you include your dietary restrictions on each reservation. If you have already booked your reservations and you are not sure you included the restrictions, please contact our Disney Reservation Center at 407-WDW-Dine or 407-939-3463. Guests are also welcome to speak to a chef or a manager on duty when arriving at the dining location.

Whether dining at a table-service or quick-service restaurant, Guest food allergy or intolerance requirements will be addressed when brought to our attention. Due to the large volume of meals we serve, vendors and suppliers occasionally swap out product. Therefore, menu items and preparation is often updated. Walt Disney Parks and Resorts will use reasonable efforts to prevent the introduction of the allergen of concern into the food through close attention during our sourcing, preparation and handling processes. However, it is ultimately up to the Guest to use his or her individual discretion to make an informed choice regarding whether to order any
particular items. Walt Disney Parks and Resorts cannot guarantee that allergens may not have been introduced during another stage of the food chain process or, even inadvertently, during preparation. We do not have separate kitchens to prepare allergen-free items or separate dining areas for Guests with allergies or intolerances.  
Most Table-Service locations and Quick-Service locations in the Walt Disney Parks and Resorts offer no-gluten added products for the main menu items with or without prior notice. For instance, if a location has waffles as the main menu item, they will generally offer gluten-free waffles as well.

Busch Gardens,VA Rhine River Cruise...




My hubby loved the Epcot Food & Wine Festival so much that he had to attend the 1st ever Busch Gardens one. To read about my  F&W festival review  please click here:

We arrived to BG around 10am. We went straight to the F&W festival tent to buy tickets for the Rhine River Cruise. We were lucky because we got tickets to the last cruise for the day. We were traveling so couldn't buy online & print. I do not drink wine but I knew it was something my husband really wanted to do. He enjoyed both wines. ;)

We checked in 15 minutes before our cruise time at the front podium. I was carded since he bought the tickets & you get a wristband. We boarded the boat & it had no tables but large seating area kinda like booth seats facing other guests.

A girl dressed in a tuxedo was the server for the whole boat & passed out everyone a tray & the wines they reserved in advance. I ate my fruit,cheese & truffle tray happily! It was a lot better than I thought it was going to be. They also had a live band on board too! It was cool to cruise around the waters of BG a few times. The cruise lasted 30 minutes & was $20 per person.

This festival is no where near as big as Disney's obviously but we did taste some good food. The sample sizes were much larger than you get at WDW as well & my hubby appreciated that!

We found this random CM sign @ BG?! All the other signs said Team Leads but this said cast members which I found odd?

The Grey Stuff Recipe & Review!!!

The above picture is an example of what the grey stuff looks like at the new "Be Our Guest Restaurant" in Fantasyland at Magic Kingdom. I have not been to the restaurant yet myself. I was told this recipe is almost exact to "the grey stuff" I randomly found it online 2 weeks ago! I made this for my office. I sent an email out titled "The Grey Stuff" & explained to everyone that it was a dessert from Beauty & the Beast etc.... I got a bunch of replies saying they thought my email was about spoiled food in the fridge. LOL. A lot of people were reluctant to try this (because it looks like...)but after they took one bite people were going back 3-4 times for a serving!!! They said it was one of the best things I've ever made so I consider this recipe a keeper. This would be a GREAT dish to bring to a BBQ. This is SO easy to make too! 

The Grey Stuff Recipe 

Ingredients:

Instant Vanilla Pudding ( I used sugar free) 
1.5 cups of 2% or whole milk 
15 oreos 
1 tub of Cool Whip 
2 T of chocolate instant pudding ( I used sugar free)
* add candy pearl sprinkles if desired

  • Put vanilla instant pudding mix in bowl & add all the milk.
  • Mix well & put in fridge 10 minutes so it sets
  • Put oreos in food processor until you create a fine powder 

oreo dust

  • Add oreo to pudding & mix well
  • Add Cool whip to mixture 
  • Add 2 T Chocolate instant pudding mix to mixture & mix well 


  • Put in fridge for one hour & then serve! I didn't have a fancy piping set to serve how WDW does. ;)

Tower of Terror Old Hollywood hotel Idea...










I never understood why Disney didn't capitalize on the TOT hotel theme. It would be an absolute beautiful project. It could be another nice resort to visit. I'm not sure where it would go. Why don't we tear down Swan & Dolphin for it? ;)

These are some of my ideas on the theming of the resort.

This looked very old Hollywood to me. There is already the Brown derby so this could be a nicer option than that?

There could be actors around the hotel w/ these hairstyles/clothes to entertain guests in lobby,bar,etc... Maybe even an old Hollywood lounge w/ Marilyn Monroe,Rat Pack type Acts?

My Magical Moment...



We were at the studios on a hot humid day in October 2012. We just finished the Backlot Tour & wanted a much needed ice cream treat & soda. My husband stood in line to get our items as I am away snapping pictures. There was a very large line. The girl handed my hubby 2 ice cream bars & 2 sodas saying that it was an anniversary gift from Mickey Mouse. He asked her if she was sure & she said Absolutely! We were so excited to get free treats. We were there for our 2nd wedding anniversary but didn't expect anything at all while there so this was a nice surprise. Neither of us had ever had the Mickey bar before so we were extra stoked that it was free! The Mickey bar was exceptional. I went to try to look at the calories & my hubby grabbed the wrapper to say calories don't count at WDW! Isn't that the truth?! ;) We will always have a special memory associated with Mickey bars now. :)

Kringla Bakeri Og Kafe & Akershus Royal Banquet Hall Cauliflower soup recipe & review....


I had amazing cauliflower soup at the Biergarten & am wondering if it is the same soup? I wasn't a fan of this recipe. It was time consuming & I didn't like the flavor. It seemed like Cauliflower mash w/ milk added to me? I've made FAR better Disney soups in the past & this is just NOT one of them!

If you want to give it a try here is the recipe:


Yield: 8 servings
Ingredients:
Ingredients for cauliflower soup: 
4 tablespoons whole butter
1 large onion, diced
¼ chopped shallots
1/8 cup roasted garlic puree
4 pounds cauliflower florets
¼ cup EJ Brandy
2 2/3 cup of chicken stock
1 ½ quarts of heavy cream
1 tablespoon fresh chopped thyme
To taste allspice
To taste crushed red pepper
To taste kosher salt
To taste ground white pepper
½ cup butter

Chive Oil for Garnish:
1 cup chives
1 cup olive oil blend
Sourdough Croutons for Garnish: 
½ loaf of sourdough baguette
Olive oil blend to lightly coat
To taste salt
To taste pepper


Method of Preparation:
for cauliflower soup:
1. On a cookie sheet, roast the shallots, garlic, onions until tender on 350° degree oven. When cooled, puree in a blender.
2. Roast the cauliflower until lightly colored.
3. In a large soup pot, melt 4 tablespoons of butter. Add onions and shallots.
4. Add the florets and allow to slightly brown, stir in garlic puree.
5. Deglaze the pot with the brandy.
6. Add chicken stock and cream. Allow the florets to soften until fork tender.
7. Puree with a stick blender or in a blender.
8. Add spices to taste.
9. Add the remaining butter to finish soup.
For chive oil:
1. In a airtight container, let steep a minimum of 24 hours.
2. Stain though a cheesecloth.
3. Store in airtight container.

For sourdough croutons: 
1. Small dice sourdough baguette and place in a bowl.
2. Lightly toss with oil, salt and pepper.
3. Place on a cookie pan and cook at 350° until golden brown

I didn't make the chive oil or croutons.....

On a cookie sheet, roast the shallots, garlic, onions until tender

Eyes & Ears Cast Member Newspaper...





I am what you call a Disney Hoarder. My College Program friends are quite impressed with all of the things I held onto from our internships. I think I kept almost every cast newspaper I received. These are over 10 years old & you will be able to tell by the articles that I chose to show. This paper is a lot like any company's internal paper. It has a section for Jobs, Roommates,people selling cars, & a section for new apartment/Housing. It also has a section of classes cast members can take to further their careers. Every now & then it told about special Cast Member discounts in Orlando. I know when I worked at WDW I could see any movie at Downtown Disney for $5 all day/night. I went to the movies A LOT! ;) Disney has an awesome career advancement  program throughout of all Disney. I wish I took more advantage of the classes that they offered. I truly miss working for this awesome company every day...... :(
